Ingredients

For the Rice Bowl:
- 3 cups cooked white or brown rice
- 1 small cucumber, diced
- 1 medium tomato, chopped
- ½ red onion, thinly sliced
- ¼ cup fresh parsley or cilantro, chopped
- ¼ cup crumbled feta cheese (optional)
For the Garlic Yogurt Sauce:
- ½ cup plain Greek or regular yogurt
- 1 clove garlic, minced
- 1 tsp lemon juice
- Salt and pepper, to taste

Preparation
- Cook the Lamb: Heat olive oil in a pan over medium heat. Add onions and sauté until soft and translucent. Stir in garlic and cook for another 30 seconds. Add TenderBites Ground Lamb and cook until browned, breaking up clumps with a spatula.
- Season and Simmer: Sprinkle cumin, paprika, oregano, salt, and pepper. Stir well to coat the meat evenly. Add lemon juice and cook for another 3–5 minutes until the lamb is tender and fragrant.
- Prepare the Sauce: In a small bowl, combine yogurt, garlic, lemon juice, salt, and pepper. Mix well and refrigerate until ready to serve.
- Assemble the Bowl: Place a serving of rice in a bowl. Top with cooked lamb, cucumber, tomato, red onion, parsley, and feta cheese. Drizzle generously with the garlic yogurt sauce.
